Walnut and Sage Pesto Pasta

  • Ingredients:

    • 1 cup Unbound Salt and Pepper Walnuts
    • 2 cups fresh basil leaves
    • 2 cloves garlic
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup olive oil
    • Salt and pepper to taste
    • 12 ounces pasta (spaghetti or penne)

  • Instructions:

    1. In a food processor, combine walnuts, basil, garlic, and Parmesan cheese. Pulse until finely chopped.
    2. With the processor running, slowly pour in olive oil until the mixture forms a smooth paste. Season with salt and pepper to taste.
    3. Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
    4. Toss cooked pasta with the walnut and sage pesto, adding reserved pasta water as needed to thin out the sauce.
    5. Serve hot, garnished with additional grated Parmesan cheese and chopped walnuts if desired.
