Quinoa Walnut Salad with Lemon Honey Dressing Recipe

Ingredients

  • 1/4 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese (optional)

For the Lemon Honey Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Quinoa:

    • In a medium saucepan, bring the quinoa and water to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
