For the Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup Unbound Salt & Pepper Walnuts, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese (optional)

For the Lemon Honey Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

  1. Cook the Quinoa:

    • In a medium saucepan, bring the quinoa and water to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
    • Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.

  2. Toast the Walnuts:

    • Preheat your oven to 350°F (175°C). Spread the chopped walnuts on a baking sheet and toast in the oven for about 8-10 minutes, or until fragrant and lightly browned. Let them cool.

  3. Prepare the Dressing:

    • In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until well combined.

  4. Assemble the Salad:

    • In a large bowl, combine the cooked quinoa, toasted walnuts, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint. If using, add the crumbled feta cheese.
    • Pour the dressing over the salad and toss gently to combine, ensuring everything is evenly coated.

  5. Serve:

    • Serve immediately or refrigerate for an hour to allow the flavors to meld together. This salad can be served cold or at room temperature.

This quinoa walnut salad with lemon honey dressing is not only delicious but also packed with nutrients. It’s a great way to enjoy a healthy and satisfying meal that’s easy to prepare. Enjoy!
